West Country entrepreneurs Richard Ballard and Steven Dring, in partnership with Michelin-starred chef Michel Roux Jr, saw an opportunity to feed a growing population without increasing our carbon footprint.
The approach?
Taking a WWII bomb shelter under London and turning it into a water-efficient, energy-efficient, and pesticide-free underground farm.
From the business plan to the ventilation, the water and even growing cycles, the creative trio use Office 365 and Surface Pro 3 to track and automate their business.
This is just the start of how they can contribute to the green economy, and hopefully inspire more brilliant thinking.
